A delightful and simple Strawberry Spoon Cake that captures the essence of summer with juicy strawberries and a tender cake.

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Combine sliced strawberries with 1/2 cup of sugar and set aside to macerate.
  3. Whisk together flour, baking powder, salt, and the remaining 1/2 cup of sugar in another bowl.
  4. Mix milk, melted butter, vanilla extract, and almond extract in a separate bowl.
  5. Pour the wet mixture into the dry ingredients, stirring until just combined.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Top the batter with the macerated strawberries and their juices.
  8. Bake for 30-35 minutes, or until golden and a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before serving.

Notes

Serve warm or at room temperature, topped with whipped cream if desired. Store leftovers in an airtight container for up to 3 days.
