Ingredients

  • 1 grilled chicken breast, sliced
  • 1 cup corn (fresh or canned)
  • 1/2 avocado, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil

Instructions

  1. Sauté the corn in a skillet with olive oil until slightly charred, about 5 minutes.
  2. Combine cooked rice, grilled chicken, charred corn, diced avocado, chopped red onion, and cilantro in a large bowl.
  3. Dress the mixture with lime juice, salt, and pepper.
