A delightful dish of chicken breasts stuffed with a vibrant mixture of spinach, feta, and sun-dried tomatoes, drizzled with balsamic vinegar.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Garlic powder to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the chopped spinach, crumbled feta cheese, and chopped sun-dried tomatoes together in a bowl.
  3. Prepare each chicken breast by cutting a pocket into it, being careful not to slice all the way through.
  4. Stuff each chicken breast with the spinach mixture, packing it tightly.
  5. Season each breast with salt, pepper, and garlic powder.
  6. Sear the chicken in heated olive oil for 3-4 minutes on each side until golden brown.
  7. Transfer the seared chicken to a baking dish and drizzle with balsamic vinegar.
  8. Bake in the oven for 25-30 minutes until fully cooked through.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Customize the stuffing with different cheeses or herbs for variations.
