Delicious bell peppers filled with a savory mixture of ground meat, rice, and zesty tomatoes, perfect for a comforting meal.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) to prepare for baking those hearty stuffed peppers.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, sauté the onion and garlic until translucent.
  4. Add the ground meat to the skillet and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff each pepper with the mixture and place them upright in a baking dish.
  7. If desired, sprinkle cheese on top of the stuffed peppers.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the tops are golden brown.
  10. Once out of the oven, serve hot and enjoy.

Notes

Pair with a green salad or garlic bread. Leftovers can be stored in the refrigerator for up to 4 days, and freeze well for up to 3 months.
