A comforting and nourishing dish featuring roasted butternut squash stuffed with a flavorful mixture of spinach, turkey bacon, and quinoa, topped with melted cheese.

  • 2 medium butternut squashes
  • 2 cups fresh spinach
  • 4 slices turkey bacon, chopped
  • 1 cup cooked quinoa
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the butternut squashes and scoop out the seeds. Drizzle with olive oil, salt, and pepper, and place cut side down on a baking sheet. Roast for 30-40 minutes until tender.
  3. In a skillet, cook the chopped turkey bacon until crispy. Add the spinach and cook until wilted.
  4. In a bowl, mix the cooked quinoa, spinach, and bacon mixture, and half of the cheese.
  5. Once the squash is roasted and tender, carefully fill each half with the quinoa mixture and top with the remaining cheese.
  6. Bake for an additional 10-15 minutes until the cheese is melted. Serve warm.
