Stuffed Italian Meatloaf

A delicious meatloaf stuffed with gooey cheese, vibrant spinach, and topped with rich marinara sauce.

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup spinach, cooked and chopped
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 egg
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, spinach, onion, garlic, egg, Italian seasoning, salt, and pepper. Mix well until combined.
  3. Lay the meat mixture out on a piece of parchment paper or wax paper into a rectangle about 1 inch thick.
  4. Sprinkle shredded mozzarella cheese on top, then carefully roll the meat into a log, sealing the edges.
  5. Place the meatloaf seam-side down in a baking dish.
  6. Pour marinara sauce over the top of the meatloaf.
  7. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
  8. Let it rest for 10 minutes before slicing. Serve with additional marinara sauce, if desired.

Notes

Use a mix of beef and pork for added flavor. Resting helps juices redistribute for a juicier meatloaf.
