Delicious and rich chocolate cookies that are sugar-free, making them a guilt-free indulgence.

Ingredients

  • 1 cup almond flour or coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol or other sugar alternative
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine almond flour (or coconut flour), cocoa powder, erythritol, baking powder, and salt. Mix well.
  3. In another bowl, mix melted coconut oil, egg, and vanilla extract until smooth.
  4. Gradually add wet ingredients to dry ingredients and stir until a dough forms.
  5. Fold in sugar-free chocolate chips if using.
  6. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  7. Flatten the cookies slightly with the back of a spoon.
  8. Bake for 10-12 minutes or until set but still soft.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store leftovers in an airtight container for up to one week or freeze for up to three months. Allow to thaw at room temperature or warm in microwave before serving.
