  • 1 cup coconut milk
  • 1 large egg
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut
  • Butter or oil for cooking

Instructions

  1. Prepare the dry ingredients in a bowl by mixing together the all-purpose flour, baking powder, and salt.
  2. Whisk the wet ingredients in another bowl, combining coconut milk, egg, sugar, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir gently until blended.
  4. Fold in the shredded coconut to the batter.
  5. Heat a skillet over medium heat and add butter or oil.
  6. Cook the pancakes by pouring 1/4 cup of batter onto the skillet for each pancake.
  7. Serve warm with shredded coconut or syrup on top.

Notes

Don’t overmix the batter for fluffier pancakes. Adjust the skillet temperature as needed for the perfect cook.
