A comforting and easy crockpot dish featuring tender chicken in a sweet and savory glaze.

Ingredients

  • 4 chicken breasts
  • 1 can (20 oz) pineapple chunks, drained
  • 1 cup soy sauce
  • ½ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 12 bell peppers, sliced (red, yellow, or green)
  • 23 green onions, sliced for garnish

Instructions

  1. Place the chicken breasts at the bottom of your crockpot.
  2. Add pineapple chunks, soy sauce, brown sugar, minced garlic, grated ginger, and sliced bell peppers on top of the chicken.
  3. Stir to combine all the ingredients, ensuring the chicken is coated well.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is cooked through and tender.
  5. Shred the chicken right in the crockpot and mix it with the sauce to soak up all those delicious flavors.
  6. Serve over rice, and garnish with sliced green onions for that extra flavor and crunch.

Notes

Pairs well with coconut rice, steamed vegetables, or a refreshing cucumber salad. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
