A delicious slow-cooked chicken dish with a sweet and tangy pineapple sauce that brings warmth and nostalgia to family gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 can (20 oz) pineapple chunks, drained
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 3 cloves minced garlic
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Place chicken breasts in the crockpot. Arrange them in a single layer to ensure even cooking.
  2. Mix together pineapple chunks, soy sauce, brown sugar, minced garlic, and minced ginger until well combined.
  3. Pour the pineapple mixture over the chicken, ensuring every piece is well-coated with the sauce.
  4. Season the dish with salt and pepper to taste. Adjust according to preference.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  6. Serve the chicken over rice, and garnish with chopped green onions.

Notes

For a thicker sauce, whisk a tablespoon of cornstarch with a tablespoon of water and stir it in during the last 30 minutes of cooking.
