  • 2 medium sweet potatoes, diced
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 4 eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally.
  3. Stir in the diced bell pepper and onion and cook until all vegetables are tender, about 5-7 minutes.
  4. Create four small wells in the veggie mixture and crack an egg into each well.
  5. Cover the skillet with a lid and let the eggs cook to your desired doneness, typically around 5 minutes.

Notes

You can substitute sweet potatoes for regular potatoes or butternut squash. For a vegan version, omit the eggs and top with avocado or tofu scramble.
