A comforting dessert featuring sweet potatoes, warm spices, and a crunchy, buttery topping, perfect for autumn gatherings.

Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 box yellow cake mix
  • 1/2 cup butter, melted
  • Whipped cream or pecan topping (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed sweet potatoes, sugar, vanilla extract, cinnamon, and nutmeg. Mix until blended.
  3. Spread the sweet potato mixture evenly in a greased 9×13 inch baking dish.
  4. Evenly sprinkle the dry cake mix over the sweet potato layer.
  5. Drizzle the melted butter over the top of the cake mix.
  6. Bake for 30-35 minutes or until the top is golden brown and bubbling.
  7. Let it cool slightly, then serve warm with whipped cream or pecans.

Notes

For a smoother texture, steam sweet potatoes instead of boiling. Can substitute canned sweet potato puree if needed.
