  • 2 large sweet potatoes, diced
  • 1 lb chicken breast, cooked and shredded
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Cook the diced sweet potatoes in the skillet until tender, about 10-15 minutes, stirring occasionally.
  4. Stir in the shredded chicken and BBQ sauce until combined and heated through.
  5. Top with shredded cheese, cover, and let it melt for about 2-3 minutes.
  6. Season with salt and pepper to your liking.
  7. Serve warm, garnished with green onions if desired.
