A comforting and hearty dish that combines the vibrant flavors of tacos with the warmth of a casserole, perfect for any occasion.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 2 cups tortilla chips
  • 1 cup shredded cheese
  • Sour cream (for serving)
  • Chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned; drain excess fat.
  3. Stir in the black beans, corn, taco seasoning, and diced tomatoes, cooking until heated through.
  4. In a baking dish, layer half of the tortilla chips, then half of the beef mixture, and half of the cheese. Repeat the layers.
  5. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let cool slightly. Serve with sour cream and garnish with chopped green onions.

Notes

For a bit of zing, add jalapeños to the beef mix for extra heat. Vegetarian option: use lentils or crumbled tofu instead of beef.
