  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Chopped green onions (for garnish)

Instructions

  1. Boil the pasta according to package instructions. Drain and set aside.
  2. Brown the ground beef or turkey in a large skillet over medium heat.
  3. Drain the excess fat to keep the dish from becoming greasy.
  4. Mix in the taco seasoning, diced tomatoes, corn, and salsa. Cook for about 5 minutes until heated through.
  5. Combine the cooked pasta with the skillet mixture and mix well.
  6. Add the shredded cheese on top and cover until melted.
  7. Garnish warm servings with chopped green onions.
