A delightful and vibrant pasta salad combining zesty taco-seasoned beef, crunchy veggies, and cheesy goodness, perfect for busy nights and potlucks.

Ingredients

  • 8 oz Pasta
  • 1 lb Ground beef
  • 1 can Diced tomatoes (canned or fresh)
  • 1 cup Corn (canned or frozen)
  • 1 can Black beans (canned, rinsed, and drained)
  • 1 cup Cheddar cheese (shredded)
  • 1/2 cup French dressing
  • 1 cup Crushed Doritos

Instructions

  1. Cook the pasta according to package instructions, salting the water for flavor. Drain and set aside.
  2. Sauté the ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Combine the cooked pasta, ground beef, diced tomatoes, corn, black beans, and shredded cheddar cheese in a large bowl.
  4. Dress the salad by pouring in the French dressing and tossing until well combined.
  5. Add crushed Doritos on top right before serving for a crunchy texture.

Notes

This salad can be served warm, cold, or at room temperature. Store leftovers in an airtight container for up to 3 days, keeping Doritos separate until serving.
