  • 8 oz pasta (e.g., rotini)
  • 1 lb ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup cheddar cheese, shredded
  • 1/2 cup creamy French dressing
  • 2 cups crushed Doritos
  • Salt and pepper to taste
  • Optional: diced onions, jalapeños, or cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. Sauté the ground beef in a skillet over medium heat until cooked through. Season with salt and pepper. Drain any excess fat.
  3. Combine the cooked pasta, ground beef, black beans, corn, tomatoes, and cheddar cheese in a large bowl.
  4. Dress the salad by pouring the creamy French dressing over and toss to combine.
  5. Add the crushed Doritos just before serving and toss gently.
  6. Serve chilled or at room temperature and enjoy!
