Taco Pasta brings together classic flavors of taco night with the heartwarming goodness of pasta, perfect for busy weeknights or gatherings.

Ingredients

  • 8 ounces pasta (any shape you prefer)
  • 1 pound ground beef or turkey
  • 1 taco seasoning packet
  • 1 can diced tomatoes with green chilies
  • 1 cup corn (frozen or canned)
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheese (your pick – cheddar is excellent)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Once you achieve that perfect al dente bite, drain it and set it aside.
  2. Brown the meat in a large skillet over medium heat until it’s beautifully browned, making sure to drain any excess fat.
  3. Stir in the taco seasoning, followed by the diced tomatoes, corn, and black beans. Cook for about 5 minutes, heating through.
  4. Fold the cooked pasta into the skillet, allowing it to soak in all those delicious flavors.
  5. Sprinkle in the shredded cheese, stirring until it melts. Season with salt and pepper to your liking.
  6. Serve hot and garnish with freshly chopped cilantro.

Notes

Perfect for leftovers; can be refrigerated for up to 3 days or frozen for 6 months. Customize with your favorite toppings or ingredients.
