  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • 1/41/2 cup water
  • 4 medium sweet potatoes (about 1214 ounces each)
  • Shredded Mexican blend cheese
  • Diced tomato
  • Diced avocado or guacamole
  • Sour cream

Instructions

  1. Sauté the aromatics: In a large skillet over medium-high heat, brown the ground beef along with the chopped onion and minced garlic for 5-7 minutes.
  2. Season the meat: Drain excess grease, add taco seasoning and salsa, and simmer for 5 minutes.
  3. Prepare the sweet potatoes: Poke holes in sweet potatoes and microwave on high for 8-10 minutes.
  4. Fluff the sweet potatoes: Slice lengthwise and fluff the insides to create a nest for the filling.
  5. Assemble the taco stuffed sweet potatoes: Spoon seasoned meat over sweet potatoes and top with cheese, tomatoes, avocado, and sour cream.

Notes

For a quicker cooking method, bake sweet potatoes at 400°F for 45-60 minutes.
