A comforting one-pan dish of fluffy rice, tender chicken, and vibrant mixed vegetables in a savory teriyaki glaze.

Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 2 tablespoons teriyaki sauce
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, lightly beaten
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until no longer pink. Remove from skillet and set aside.
  3. In the same skillet, add the mixed vegetables and sauté until tender.
  4. Push the vegetables to the side and pour in the beaten eggs, scrambling until fully cooked.
  5. Add the cooked rice and chicken back to the skillet, tossing everything together.
  6. Pour in the soy sauce and teriyaki sauce, mixing thoroughly.
  7. Season with salt and pepper to taste.
  8. Stir in the chopped green onions just before serving.

Notes

For best results, use day-old rice. This dish is customizable with different proteins or vegetables.
