A heartwarming and hearty Texas Cowboy Stew that brings the nostalgic flavors of childhood summers at the ranch.

Ingredients

  • 1 lb ground beef
  • 1/2 lb smoked sausage, sliced
  • 4 slices bacon, chopped
  • 4 medium potatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) beans, drained (such as kidney or pinto)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Sizzle the bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. Brown the ground beef in the same pot, seasoning with salt and pepper and draining excess fat.
  3. Add the sliced smoked sausage and cook for an additional 5 minutes.
  4. Sauté the diced onion and minced garlic until translucent.
  5. Combine the diced potatoes, drained corn, and drained beans, mixing well.
  6. Stir in the diced tomatoes and beef broth, adding chili powder.
  7. Bring to a boil, then reduce heat to a simmer. Cover and cook for 30 minutes.
  8. Final touches: stir in the reserved bacon and adjust seasoning before serving.

Notes

Serve with cornbread or warm biscuits. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
