  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 egg
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. In another bowl, whisk together the flour, salt, and baking powder; gradually add to the butter mixture and stir until combined.
  4. Stir in the vanilla extract.
  5. In a separate bowl, mix the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, cloves, egg, and milk until well combined.
  6. Roll the dough into small balls and flatten slightly.
  7. Place a spoonful of pumpkin filling on half of the cookie rounds, then top with another round and seal the edges.
  8. Bake for 15-20 minutes or until golden.
  9. Allow cookies to cool on a wire rack before serving.

Notes

Dust with powdered sugar or drizzle with a warm glaze for extra flavor. Store in an airtight container for up to three days.
