  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the mashed sweet potatoes, sugar, brown sugar, and softened butter until smooth and fluffy.
  3. Beat in the egg until well combined.
  4. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Optionally, fold in nuts or chocolate chips.
  6. Drop tablespoon-sized amounts of dough onto a greased baking sheet.
  7. Bake for 15-20 minutes or until lightly browned and a toothpick comes out clean.
