Delightful cookies blending rich cocoa, espresso, and creamy mascarpone, reminiscent of the classic Italian dessert.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons strong brewed espresso
  • 1/2 cup mascarpone cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, espresso, and mascarpone cheese until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Using a spoon or cookie scoop, drop generous amounts of dough onto the prepared baking sheet.
  7. Roll each cookie ball in powdered sugar before placing it on the sheet.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Allow to cool on the baking sheet before transferring to a wire rack to cool completely.
  10. Dust with additional powdered sugar before serving.

Notes

Store cookies in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
