  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup mozzarella cheese, diced
  • 1/4 cup Italian dressing
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the tortellini according to package instructions until al dente, then drain and let cool.
  2. Combine the cooled tortellini, halved cherry tomatoes, diced cucumber, diced bell pepper, thinly sliced red onion, sliced black olives, and diced mozzarella cheese in a large bowl.
  3. Pour the Italian dressing over the salad mixture and gently toss to combine.
  4. Season with salt and pepper to taste, adjusting as needed.
