A vibrant and refreshing Tortellini Salad bursting with color, texture, and flavor, perfect for summer gatherings.

Ingredients

  • 8 oz tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Start by cooking the tortellini according to package instructions. Once they’re al dente, drain and give them a cool rinse under cold water to stop the cooking process.
  2. In a large bowl, mix together the perfectly cooked tortellini, halved cherry tomatoes, diced cucumber, red onion, black olives, crumbled feta cheese, and chopped basil.
  3. In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  4. Pour the dressing over the salad mixture and gently toss everything together until well coated.
  5. Serve chilled or at room temperature and enjoy!

Notes

This salad can be paired with grilled chicken or shrimp for added protein. It stores well for up to 3 days.
