  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Cook the ground turkey over medium heat until browned.
  4. Add cooked rice, diced tomatoes, garlic powder, onion powder, salt, and pepper to the skillet, and mix well.
  5. Fill each zucchini boat with the turkey mixture.
  6. Sprinkle shredded cheese on top, if desired.
  7. Place the stuffed zucchini on a baking sheet and bake for 25-30 minutes.
