A delightful Tuscan-inspired dish featuring tender salmon fillets in a rich, creamy sauce with garlic, cherry tomatoes, and fresh spinach.

Ingredients

  • 4 salmon fillets
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Melt the butter in a large skillet over medium heat until it starts to brown slightly.
  2. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant and golden.
  3. Cook the halved cherry tomatoes in the skillet for about 3-4 minutes until softened.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Stir in the grated Parmesan cheese until it melts into the sauce.
  7. Season the sauce with salt and pepper to taste.
  8. Push the sauce to one side of the skillet and place the salmon fillets in, skin-side down. Sear for about 5-6 minutes on each side until cooked through.
  9. Return the sauce over the cooked salmon and garnish with fresh basil.

Notes

Pairs well with a light arugula salad and garlic bread. Leftovers can be stored in an airtight container for up to 3 days.
