Deliciously creamy and cheesy twice-baked potatoes, perfect for a cozy meal.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the russet potatoes directly on the oven rack. Bake for 45-60 minutes, or until they’re tender.
  3. Remove the potatoes and let them cool slightly. Cut them in half lengthwise and scoop out the flesh into a bowl.
  4. Add sour cream, shredded cheddar cheese, milk, butter, salt, and pepper to the bowl. Mash until creamy.
  5. Spoon the creamy mixture back into the hollowed potato skins.
  6. Sprinkle additional cheddar cheese on top if desired.
  7. Pop the stuffed potatoes back into the oven and bake for another 15-20 minutes.
  8. Garnish with chopped green onions before serving.

Notes

You can customize the filling with herbs, bacon, or different cheeses for variety.
