Twice Baked Potatoes are a delicious and comforting dish featuring crispy skins and a velvety filling, perfect for family dinners or potlucks.

Ingredients

  • 4 large russet potatoes
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-60 minutes, or until tender.
  4. Let them cool slightly.
  5. Cut the potatoes in half lengthwise and scoop out the insides, leaving a thin layer of potato in the skins.
  6. In a bowl, mash the scooped potato with butter, sour cream, half of the cheese, green onions, salt, and pepper until smooth.
  7. Spoon the mixture back into the potato skins, top with remaining cheese.
  8. Return to the oven and bake for another 15-20 minutes until heated through and cheese is melted.
  9. Serve hot.
