A comforting and flavorful Mongolian Beef made easily in a slow cooker, perfect for busy weeknights.

  • 2 pounds flank steak, sliced thinly
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup water
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Steamed rice or vegetables for serving

Instructions

  1. Make the Flavorful Sauce: In a bowl, mix soy sauce, brown sugar, water, garlic, ginger, and red pepper flakes. Set aside to let the flavors meld.
  2. Sear the Beef: In a skillet, heat vegetable oil over medium-high heat. Sear the beef slices until browned on both sides.
  3. Combine Beef and Sauce: Place the seared beef in a slow cooker and pour the prepared sauce over it.
  4. Slow Cook to Perfection: Cover and cook on low for 5-6 hours or on high for 3-4 hours.
  5. Thicken the Sauce: About 30 minutes before serving, mix cornstarch with a bit of water and stir this into the slow cooker.
  6. Serve and Garnish: Serve over steamed rice or with fresh vegetables, garnished with chopped green onions.

Notes

Make sure to slice flank steak thinly against the grain for the best texture. Feel free to add vegetables for extra flavor.
