A simplified, one-pan version of stuffed peppers that combines ground meat, colorful bell peppers, tomatoes, and rice for a comforting weeknight meal.

  • 2 bell peppers (any color), diced
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Warm up your kitchen by heating olive oil over medium heat. Add diced onion and minced garlic; sauté until softened.
  2. Brown the ground meat in the skillet until fully cooked to create a hearty base.
  3. Add the diced bell peppers; cook for about 5 minutes until they begin to soften.
