A quick and easy take on classic stuffed peppers, this skillet dish combines ground beef (or turkey), rice, and vibrant bell peppers for a comforting meal.

Ingredients

  • 1 lb ground beef or turkey
  • 3 bell peppers (red, green, yellow), diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups cooked rice
  • 1 can diced tomatoes
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • Cheese (optional)

Instructions

  1. Sizzle the meat in a large skillet over medium heat until fully cooked, approximately 5-7 minutes.
  2. Add chopped onions and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
  3. Stir in diced bell peppers and cook until they begin to soften.
  4. Mix in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook until heated through, about 5 minutes.
  5. Top with cheese if desired, cover until melted, about 2-3 minutes.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Pairs well with a green salad or warm crusty bread.
