Chewy and delicious peanut butter cookie bars, perfect for sharing and expressing love on Valentine’s Day.

Ingredients

  • 1 cup peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • Sprinkles for decoration (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, beat together peanut butter and softened butter until smooth.
  3. Add the brown sugar and granulated sugar, and mix until well combined.
  4. Beat in the egg and vanilla extract.
  5. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the peanut butter mixture, stirring until just combined.
  6. Fold in chocolate chips if desired.
  7. Spread the batter evenly in the prepared baking dish. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool, then cut into bars and decorate with sprinkles if desired.

Notes

Store leftovers in an airtight container at room temperature for up to five days, or refrigerate for up to a week. They can also be frozen for up to three months.
