  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 vanilla bean, seeds scraped out
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Green food coloring
  • Sprinkles for decoration (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together the flour, baking soda, and salt until well combined.
  2. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the scraped seeds from the vanilla bean, the egg, vanilla extract, and almond extract until well incorporated.
  4. Gradually mix in the dry ingredients and add green food coloring until the desired shade is achieved.
  5. Scoop the dough onto baking sheets lined with parchment paper, flatten each cookie slightly, and add decorative sprinkles if desired.
  6. Bake for 10-12 minutes, until the edges are lightly golden.
  7. Allow to cool on sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week, or freeze for longer storage.
