Delicious and healthy Vegan Burrito Wraps filled with a flavorful mix of black beans, rice, corn, and fresh vegetables wrapped in warm tortillas.

Ingredients

  • 4 large tortillas
  • 1 cup cooked rice (brown or white)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, canned, or frozen)
  • 1 cup diced bell peppers
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Warm the tortillas in a pan or microwave until pliable.
  2. Combine the rice, black beans, corn, bell peppers, cumin, salt, and pepper in a large bowl.
  3. Spread a spoonful of salsa on each tortilla.
  4. Spoon the rice and bean mixture onto the tortillas, add avocado slices, and top with cilantro if desired.
  5. Roll up each tortilla tightly, folding the sides in as you go.
  6. Serve immediately with extra salsa on the side.
