A quick, hearty, and flavorful one-pot meal that’s completely plant-based, perfect for busy weeknights.

Ingredients

  • 8 oz spaghetti
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, combine the spaghetti, diced tomatoes, chopped onion, minced garlic, vegetable broth, Italian seasoning, salt, and pepper.
  2. Bring to a boil over medium-high heat, then reduce to a simmer.
  3. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened.
  4. Taste and adjust seasoning if necessary.
  5. Serve hot, garnished with fresh basil.
