A flavorful plant-based veggie burger inspired by black beans and fresh vegetables, perfect for summer cookouts.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/2 cup corn
  • 1/4 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Burger buns
  • Lettuce, tomato, and other toppings of choice

Instructions

  1. Mash the black beans with a fork until mostly smooth.
  2. Add breadcrumbs, corn, onion, bell pepper, garlic, cumin, chili powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into round patties, about the size of your burger buns.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for about 4-5 minutes on each side, until golden brown.
  6. Assemble on burger buns with lettuce, tomato, and any other desired toppings.

Notes

For firmer patties, refrigerate the mixture for 30 minutes before cooking. You can substitute breadcrumbs with crushed crackers or oats.
