Delicious and fresh Vietnamese Summer Rolls filled with shrimp or tofu, fresh herbs, and vibrant vegetables, perfect for gatherings or a light meal.

Ingredients

  • Rice paper wrappers
  • Cooked shrimp or tofu
  • Rice vermicelli noodles
  • Fresh herbs (mint, cilantro, basil)
  • Lettuce leaves
  • Julienned vegetables (carrots, cucumber, bell peppers)
  • Dipping sauce (such as hoisin or peanut sauce)

Instructions

  1. Prepare the rice vermicelli noodles according to the package instructions. Once cooked, drain and set aside, allowing them to cool slightly for easier handling.
  2. Soak the rice paper wrappers in warm water for 10-15 seconds until pliable, then lay flat on a clean, damp countertop.
  3. Layer your fresh ingredients in the center of each wrapper, starting with noodles, cooked shrimp or tofu, fresh herbs, lettuce, and julienned vegetables.
  4. Fold the sides of the wrapper over the filling, then roll up tightly from the bottom to the top.
  5. Repeat this process with the remaining wrappers and fillings, creating as many rolls as you desire.
  6. Serve the completed summer rolls on a platter with your chosen dipping sauce.

Notes

Store any leftovers lightly wrapped in damp paper towels in an airtight container for up to two days.
