A refreshing vinegar-based coleslaw that combines green and red cabbage with a tangy apple cider vinegar dressing, perfect for summer gatherings.

  • 1 cup carrots, grated
  • 1/2 cup red cabbage, shredded
  • 1/2 cup onions, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon celery seed (optional)

Instructions

  1. Prepare the vegetables: In a large bowl, combine the green cabbage, grated carrots, red cabbage, and sliced onions.
  2. Whisk the dressing: In a separate bowl, whisk together the apple cider vinegar, sugar, salt, black pepper, and celery seed (if using) until the sugar is dissolved.
  3. Combine and coat: Pour the dressing over the cabbage mix and toss until evenly coated.
  4. Chill and meld: Cover the coleslaw and refrigerate for at least 1 hour before serving.
