  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup spinach or kale (optional)
  • Parmesan cheese for garnish (optional)
  • Olive oil for sautéing

Instructions

  1. Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the Aromatics: Stir in the garlic, thyme, and smoked paprika, cooking for another minute until fragrant.
  3. Combine the Beans and Broth: Add the white beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
  4. Incorporate the Greens: If desired, add spinach or kale and cook until wilted.
  5. Season to Taste: Season with salt and pepper. For a creamier soup, blend part of the soup with an immersion blender.
  6. Garnish and Serve: Serve hot, garnished with Parmesan cheese if using.

Notes

For a heartier soup, consider adding diced potatoes or quinoa. You can swap out vegetables based on your preferences.
