Delicious and comforting tacos filled with a rich chicken chili and topped with fresh cilantro and lime.

Ingredients

  • Corn tortillas
  • Cooked shredded chicken
  • White beans
  • Chicken broth
  • Onion
  • Garlic
  • Green chilies
  • Cumin
  • Chili powder
  • Salt
  • Pepper
  • Cilantro
  • Lime wedges

Instructions

  1. Sauté the chopped onion and minced garlic in a pot until the onion is translucent.
  2. Toss in the shredded chicken, white beans, chicken broth, green chilies, cumin, chili powder, salt, and pepper. Mix well.
  3. Simmer the mixture for about 10-15 minutes to meld the flavors.
  4. Warm the corn tortillas in a skillet over low heat.
  5. Scoop a generous portion of the chicken chili mixture onto each tortilla.
  6. Top each taco with fresh cilantro and serve with lime wedges.

Notes

Store leftover chili filling in an airtight container in the fridge for up to three days or freeze for up to three months.
