Ingredients

  • 200g white chocolate
  • 100g fresh blueberries
  • 50g cream cheese
  • 1 teaspoon vanilla extract
  • Cocoa powder or shredded coconut for coating

Instructions

  1. Melt the white chocolate in a microwave-safe bowl or over a double boiler until smooth.
  2. Mix the cream cheese and vanilla extract in a separate bowl until smooth.
  3. Fold the melted white chocolate into the cream cheese mixture.
  4. Incorporate the fresh blueberries evenly into the mixture.
  5. Chill the mixture in the refrigerator for 30 minutes until firm.
  6. Roll small portions of the chilled mixture into balls.
  7. Coat each truffle in cocoa powder or shredded coconut.
  8. Refrigerate the coated truffles again until ready to serve.

Notes

These truffles can be made a day in advance. Store in an airtight container in the fridge for up to one week.
