A comforting and nourishing bowl featuring savory chicken, sweet roasted sweet potatoes, and fluffy rice, perfect for any weeknight dinner.

  • 2 chicken breasts
  • 2 sweet potatoes
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and cubing them, then tossing with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. Cook the rice by bringing the chicken broth to a boil, adding the rice, then simmering for about 15 minutes.
  5. Cook the chicken breasts in a skillet over medium heat for 6-7 minutes on each side until golden brown.
  6. Assemble the bowl with a layer of rice, topped with roasted sweet potatoes and sliced chicken, garnished with chopped parsley.

Notes

Feel free to bake the sweet potatoes ahead of time. Make sure not to crowd them on the baking sheet for better roasting.
