Delicious zucchini boats filled with ground meat, marinara sauce, and gooey mozzarella, perfect for a cozy dinner.

Ingredients

  • 2 medium zucchinis
  • 1 cup ground turkey or beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center.
  3. Heat a drizzle of olive oil in a skillet over medium heat.
  4. Add the ground turkey or beef and cook until browned.
  5. Stir in the marinara sauce, Italian seasoning, salt, and pepper.
  6. Spoon the mixture into the hollowed-out zucchinis, packing it in.
  7. Top each filled zucchini with shredded mozzarella cheese.
  8. Bake for 20-25 minutes until tender and cheese is bubbly.
  9. Serve hot and enjoy!
