A moist and delicious zucchini bread recipe, perfect for breakfast or a snack.

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the Oven and Prepare the Loaf Pan
  2. Mix Zucchini, Sugar, and Oil
  3. Incorporate the Eggs and Vanilla
  4. Combine Dry Ingredients
  5. Blend Wet and Dry Mixtures
  6. Fold in the Nuts (if using)
  7. Pour into the Loaf Pan
  8. Bake to Perfection
  9. Allow to Cool

Notes

If your zucchini is watery, squeeze out some moisture before mixing. For added flavor, consider adding nutmeg or chocolate chips.
