A moist and flavorful Zucchini Bread filled with warm spices, perfect for any occasion.

  • 2 cups grated zucchini
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan generously.
  2. Combine the grated zucchini, vegetable oil, applesauce, sugar, eggs, and vanilla extract in a mixing bowl. Stir well.
  3. Mix together the all-purpose flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  4. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in walnuts if using.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for 50-60 minutes. Check for doneness with a toothpick.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Squeeze out excess moisture from the grated zucchini for a less soggy bread. Consider swapping half the sugar for brown sugar for added flavor.
