Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C), and grease and flour a 9×5 inch loaf pan.
  2. Combine the grated zucchini, sugar, and vegetable oil in a large bowl. Mix well.
  3. Add the eggs and vanilla extract. Stir until well combined and smooth.
  4. Whisk together the flour, baking soda, baking powder, ground cinnamon, and salt in another bowl.
  5. Mix the dry ingredients into the wet mixture gradually, stirring until just combined.
  6. Fold in the nuts if using for added texture.
  7. Pour the batter into the prepared loaf pan, ensuring even distribution.
  8. Slide the loaf pan into the oven and bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Store the bread at room temperature in an airtight container for up to 3 days, or freeze slices for up to 3 months.
