Delightful and nutritious muffins combining the flavors of zucchini and carrots, perfect for breakfast or an afternoon snack.

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the grated zucchini and grated carrots together with the brown sugar, granulated sugar, vegetable oil, and eggs.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Place the muffin tin in the oven and bake for 20-25 minutes.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack.

Notes

For extra flavor, add nuts, raisins, or chocolate chips to the batter.
