Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup shredded cheddar cheese
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Combine the flour, baking powder, baking soda, salt, and sugar in a large bowl.
  3. Whisk together the eggs, oil, and vanilla extract in another bowl.
  4. Fold in the grated zucchini and cheese until well mixed.
  5. Mix the wet ingredients into the dry ingredients until just combined.
  6. Fill the muffin tins about 3/4 full with the batter.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Cool slightly before removing muffins from the tin. Enjoy warm or at room temperature!

Notes

Squeeze out excess moisture from the grated zucchini to prevent soggy muffins.
